Apple Rock Cakes

  • 50 grams butter
  • ¼ cup condensed milk
  • 1 egg
  • ¼ cup rolled oats
  • ½ cup of raisins
  • 1 cup diced unpeeled apples
  • 1 teaspoon grated lemon rind
  • 1 cup of flour
  • ¼ teaspoon of salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon cinnamon

Cream butter & condensed milk together.

Beat in the egg. Add rolled oats, raisins, apple & lemon rind.

Sift flour, salt, baking powder, soda & cinnamon together & stir into creamed mixture.

Drop in teaspoon lots onto a greased oven tray.

Bake at 200C for 10 to 12 minutes until lightly browned. Makes 24.

Dietitian’s comments: A great substitute to the commercial cookies.

These rock cakes include raisins, apples and oats and are a great combination. Always remember though, portion control. Consume up to 3 rock cakes per serving.
