Cream butter & condensed milk together.
Beat in the egg. Add rolled oats, raisins, apple & lemon rind.
Sift flour, salt, baking powder, soda & cinnamon together &
stir into creamed mixture.
Drop in teaspoon lots onto a greased oven tray.
Bake at 200C for 10 to 12 minutes until lightly browned. Makes 24.
Dietitian’s comments: A great substitute to the commercial cookies.
These rock cakes include raisins, apples and oats and are a great combination.
Always remember though, portion control. Consume up to 3 rock cakes
per serving.
