    Low Fat Orange Oaties

  • 1 ¾ Cups clear honey
  • 1 ½ Cups orange juice
  • 1 Cup of rolled oats
  • 1 Cup plain flour
  • 1 ½ Teaspoons grated orange rind
  • 1 Teaspoon baking soda

Put the honey & orange juice in a small pan & simmer over low heat for 8 minutes, stirring occasionally, until the mixture is thick & syrup like.

Put the oats, flour & orange rind into a bowl. Mix the baking soda with a tablespoon of boiling water & add to the flour mixture, together with the honey & orange syrup. Mix well with a wooden spoon.

Place spoonful of the mixture On a lightly sprayed oven try. Space 2 cm apart 7 bake for 10-12 minutes or until golden brown.

Makes 16.

 

Dietitian’s comments: These low fat oaties are packed with goodness including vitamin C & fibre. Great for a school lunch box or as an afternoon snack.
